Blend spinach, kale, chard, or whatever greens and water or whatever liquid you decide in till smooth then add whatever frozen fruit you want. You can even sneak in other veggies by just adding a frozen banana it totally masks all other flavors. But we boil a lot of soups with vegetables eg. carrots, water cress, potatoes, onions, corn etc… for him to drink. One good point is my boy loves apples and will munch on green apples every day so he has the roughage! Recently we noticed that he has been eating on corn, peas and spring onions found in the soup/fried rice. It is a good start.

Yeh, my boy loves cheese too! Will try the suggestion to cook brocolli or cauliflower and sprinkling cheese on top!

Texture, color, taste? Different sources of vegetables can taste different, you can also experiment with that. (e.g. cherry tomatoes from different farms can taste different)

My kids love vegetables, but it does depend on how they are cooked. Like many kids, they do not like mushy bitter vegetables. They take a lot of salad (with oil/vinegar), and quick stir-frys (just salt, garlic, oil/butter). I also vary the vegetables so that they don’t get bored. Occasionally they may go off one vegetable, I will just rotate it out of the menu for a month or so and bring it back later.
