      I think the 7-up acts like baking soda.


      Taste wise it does taste like traditional steamed egg cake with a hint of pandan. It is pretty plain. You can try reducing the sugar and eat it with kaya. Or add raisins or even wolfberry or add a bit instant coffee dissolved in a bit of water. It makes a good base for many possibilities.

      I did not have any self raising flour so I substituted with plain flour plus 1 tsp of baking powder. So guess it did not turn out as fluffy as it should. But I actually like this texture. It has a springiness of chewiness to it.

      I steamed it for about 15mins on high heat over the stove. If you are using an electric steamer maybe choose a function that uses high heat and just time it yourself.

        Guess you can try substituting with a tsp of baking soda. I tried it cos the thought of using 7-up was quite unique. Haha. The kids happily finished the remaining 7-up. They were actually telling my enough oredi mummy, dun put so much, so that they will have more leftovers to drink. :lol:

        I think you are right about steamed cakes smelling more eggy, especially for one that does not have much additional flavourings. When fresh out of the steamer the egg smell was pretty strong. But once it cooled, not so eggy.

        Wonder if it will taste nice if I make a savoury version. Reduce sugar, add some shredded cheese and bacon bits.
        Hmmm..... might try out one of these days.
        i use the same recipe to cook a normal cake using microwave
        but when i compare that to using an oven to bake,
        the eggy smell is so strong....
        ya, u're rite, the worst is when u juz removed from the heat.

        shredded cheese and bacon bits in cake, hmm.....never taste b4....
        if u try it out, do feedback to us how it tastes.

              Hello all the baking shifus, could you please enlighten me whatโ€™s the difference bet vanilla extract and vanilla essence? Where can I get vinalla extract? Is it only available at Phoon Huat? Thanks in advance.

                Usually the stuff that we see in supermarts are Vanilla extract, though it may be termed as vanilla essence on the bottle. Vanilla essence is much more concentrated and is usually used by professionals.

                    I am into sponge cakes lately. Made 2 last week.

                    This orange sponge was the 1st one I tried. I followed the recipe but had a feeling that the steps and the recipe were not quite right. Different from the normal sponge recipe steps that I am used to. True enough, the cake did not turn out that well. Fell a little flat and was a bit dense at the bottom. Taste wise it was really refreshing.

                    This coffee sponge was baked yesterday. I tweaked the recipe a little and fell back on the method that I am more familiar with and it turned out fine.
                    Could do with a little more sugar though and DH said could do with more coffee.

                      Is it... so we have been using extract instead of essence ๐Ÿ˜›

                      that is what my mum told me. ๐Ÿ˜‰ So far, seems to be so or maybe the brands that I've been using, which are the common ones found in NTUC seems easily interchangeable. And most recipes call for extract rather then essence.

                        If still in doubt, go for the lesser amt. That is, if it calls for 1 tsp of extract and you have essence and you are afraid that yours is the true essence, then 1/2 the qty. If it calls for essence and you have extract, stick to the qty that is called for. Err on the safe side cos when mixing and you find that the fragrance is still not there, can always add a little more. Add too much, cannot take out.
