Does anyone know of such a thing as low carb noodles? What are they made of?

Think you are referring to Shirataki noodles. They are made from elephant yam. You've most probably eaten it before without even realising what it is. You can find them in Sukiyaki, you know, that grey looking springy mass of tang hoon looking thingy. That is shirataki noodles.
