For ladyβs fingers, how do you "handle" them? Wash briefly and start cutting? Do I need to scrub the skin? Thanks.

The skin is quite funny, it may have something sharp. Yes, inside is slimy, like mucus !

for prawn dumpling, i am particular abt the type of prawns used,
must be sea prawns , not pond prawns for the best results.
juz like making Har kow, must use special type of prawns. -
Iβll just soak them in water. Change the water at least once thereafter rinse, drip dry and slice.
When not cut wonβt be slimy what. And I learned from my helper. Keep it dry when you are slicing it then not as slimy.
