      Talking about ximending, anybody try Ah Zhong mian xian ? I ate almost daily when I was in Taiwan.

          For lady’s fingers, how do you "handle" them? Wash briefly and start cutting? Do I need to scrub the skin? Thanks.

                yes, i am rather fussy, i'll use the knife to \"scrub\" the skin.

                    OMG, I simply rinse under the tap and start cutting.
                    The skin is quite funny, it may have something sharp. Yes, inside is slimy, like mucus ! πŸ˜‰

                      for prawn dumpling, i am particular abt the type of prawns used,
                      must be sea prawns , not pond prawns for the best results.

                      juz like making Har kow, must use special type of prawns.

                        I’ll just soak them in water. Change the water at least once thereafter rinse, drip dry and slice.


                        When not cut won’t be slimy what. And I learned from my helper. Keep it dry when you are slicing it then not as slimy.
